چکیده

In the present investigation, out of 27 (24.10%) strains of Escherichia coli isolated from 112 beef samples comprising raw meat (45), kabab (36) and kofta (31), 9 (33.33%) belonging to 7 different serotypes were verotoxic as tested by vero cell cytotoxic assay. Serotype O145 was the predominant STEC in raw meat. Interestingly, one STEC-O157 strain was also detected. All the STEC strains were positive for Stx genes by polymerase chain reaction showing stx2 (77.78%) to be most predominant followed by stx1 (22.22%). Phenotypic enterohaemolysin production on washed sheep blood agar supplemented with CaCl2 revealed 6 (66.67%) STEC strains to be positive. Presence of STEC in cooked beef products, viz., kabab and kofta appeared to be a matter of concern and potential threat to public health.

Detection and Molecular Characterization of Sorbitol Negative Shiga Toxigenic Escherichia Coli in Chicken from Northwest of Iran

Shiga toxin-producing Escherichia coli (STEC) are food-borne pathogens primarily associated with the consumption of contaminated ground beef and are an important food safety concern worldwide. STEC has been found to produce a family of related cytotoxins known as Shiga toxins (Stxs). Shiga toxins have been classified into two major classes, Stx1 and Stx2. A single strains of STEC can produce St...

Cooking Inactivation of Shiga Toxin Producing Escherichia coli (STEC) in Non-intact Beefs--a mini-Review

Escherichia coli O157:H7 and Non-O157 shiga toxin producing E. coli (STEC) serogroups O26, O45, O103, O111, O121, or O145 are both considered adulterated in non-intact beefs. Forty to fifty-eight percent of U.S. consumers prefer to order beef steaks of medium rare to rare status. From 2000 to 2007, undercooked non-intact beef products have been involved in several outbreaks in the United States...

Prevalence and pathogenicity of Shiga toxin-producing Escherichia coli in beef cattle and their products.

During the past 23 yr, a large number of human illness outbreaks have been traced worldwide to consumption of undercooked ground beef and other beef products contaminated with Shiga toxin-producing Escherichia coli (STEC). Although several routes exist for human infection with STEC, beef remains a main source. Thus, beef cattle are considered reservoirs of O157 and nonO157 STEC. Because of the ...
